Kerrygold Swiss Cheese is naturally the cheese of choice for this dip. Its nutty flavor pairs perfectly with the corned beef and sauerkraut. Stir in some cream cheese, sour cream and Thousand Island dressing, and you have an easy-to-make dip that is guaranteed to please a crowd.

Hot Cheesy Reuben Dip

8 ounces cream cheese, softened

¾ cup Thousand Island dressing

½ cup sour cream

7 ounces Kerrygold Swiss Cheese, shredded

2 cups corned beef, diced

1 cup sauerkraut, drained well

Parsley for garnish


In a medium bowl, mix cream cheese, Thousand Island dressing and sour cream until smooth. Stir in Kerrygold Swiss cheese, corned beef and sauerkraut. Transfer to 8-inch baking dish and bake for 20-30 minutes or until cheese is melted and dip is bubbling. Garnish with parsley and serve with crackers.
