Mini Cheeseburger Skewers
These Mini Cheeseburger Skewers are so easy to put together and taste exactly like a cheeseburger without having to turn on the grill. And since Kevin does all of the grilling in our house, this is ideal for me! We melted Kerrygold Swiss on top of mini meatballs for these tasty little morsels. I loved the sweet and nutty flavor that the Swiss cheese adds to the beef, but feel free to substitute your favorite Kerrygold Cheese - Aged Cheddar or Skellig would taste fabulous, too! Add some green leaf lettuce and tomato, and you have the perfect little bites to show Dad just how much you appreciate everything he does.
RECIPE: Mini Cheeseburger Skewers
24 mini meatballs
8 thin slices of Kerrrygold Swiss Cheese, cut into thirds
12 grape tomatoes, cut in half
Green leaf lettuce
Ketchup and mustard for dipping
Preheat oven to 350 degrees
Place meatballs on a jelly roll pan and heat according to directions on package.
Add slices of Kerrygold Swiss to top of meatballs and heat until just melted, about 3 minutes.
While meatballs are baking, start prepping the toothpicks.
Skewer half of a grape tomato and a little of the green leaf lettuce. When meatballs are done, remove from oven, add meatball to the end of the toothpick and serve immediately.
