Irish Dairy Board Introduces Duhallow Farmhouse Cheese

The Irish Dairy Board has introduced its first, authentic farmhouse cheese. Called Duhallow, the new cheese meets all the criteria for the "farmhouse" designation: made on a single farm with milk exclusively from the farm's own cows. Like all other Kerrygold products, only milk from cows that graze on Ireland's luxuriant pastures is used, and no growth hormones are allowed.

Kerrygold Duhallow is a semi-soft cheese with a distinctive buttery flavor, rich golden color, and a pleasantly creamy aftertaste. It is a vegetarian cheese made with pasteurized milk from pedigreed Friesian cows that graze deep in the Duhallow region of County Cork. The cheese develops its unique flavor from the flora that has built up in the maturing rooms, where the wheels are allowed to sit and breathe as they age naturally.

Handcrafted by the renowned Irish cheesemaker, Mary Burns, Duhallow is made on the Burns family farm with milk entirely from the farm's own herd. For decades the herd has earned a singular reputation for the quality of its milk. The source dates back to 1925 when the family first imported Friesians into Ireland. This was the foundation stock that developed into the pedigreed Ardrahan herd.

Mary Burns believes in breeding her own stock, which ensures true consistancy in the herd, the milk and the quality of the resulting cheese. Since 1983 she has used the milk to make farmhouse cheeses, most notably the celebrated Ardrahan. Now this remarkable cheesemaker has developed another peerless cheese, Kerrygold Duhallow, exclusively for the Irish Dairy Board. Although a new cheese, Duhallow has already won prizes at the World Cheese Awards in the U.K. and is becoming a popular choice among some of Ireland's top chefs.

Format: Semi-soft cheese made in three-pound wheels, hand-cut and sold in wedges.
Uses: Fabulous on a cheese board, melted into sauces, for superior grilled cheese sandwiches.

The new cheese joins a family of favorites: Kerrygold Dubliner, Aged Cheddar, Reduced Fat-Aged Cheddar, Reserve Cheddar, Red Leicester, Ivernia, Blue, Blarney Castle and Swiss, as well as two Kerrygold flavored cheeses: Dubliner with Irish Stout, and Aged Cheddar with Irish Whiskey. Kerrygold also is known for its salted and unsalted Pure Irish Butter and Kerrygold Garlic & Herb Butter.
