First, let’s start small: hash for two. Cooking for two is kinda my thing (if you didn’t already know this), so we’ll start there.

Hash for two has 4 strips of bacon, 1 medium onion, 2 cups of small-diced butternut squash, and 2 tablespoons of butter. It’s easy to multiply up to feed your crowd, or to have leftovers. Make the hash in advance and let it rest in the fridge. I like to make it make it on the weekend.

To make the hash into pasta, use 3 ounces of pasta per person plus 1/3 cup of your favorite grated cheese. Can I recommend Kerrygold Aged Cheddar? I dice it into chunks and then grind it in the food processor so that it has a consistency similar to Parmesan. Can I also recommend an extra drizzle of melted Kerrygold Butter just before serving.
