Instructions:

  1. Heat the oil in a large skillet. Sauté peppers and onions (including jalapeños or chipotles) until just tender
  2. Add chicken and warm through. Season with salt and pepper
  3. Remove from heat, toss with salsa
  4. Toast baguette
  5. Top with fajita mixture and Kerrygold Aged Cheddar Cheese
  6. Broil just until cheese melts and browns a wee bit
  7. Remove from broiler
  8. If using guacamole, pile it on
  9. Close sub, press halves gently together
  10. Using serrated knife, slice into 4” pieces, using a gentle sawing motion
  11. Enjoy with your favorite soda or brew!
