Instructions:
- Preheat oven to 350 degrees F.
- Heat olive oil in oven safe non–stick pan.
- Once oil is shimmering, add mushrooms and cook for 2-3 minutes.
- Add onions, potatoes and garlic and cook until vegetables are almost done (3-5 minutes.)
- Add arugula and cook until wilted.
- While vegetables are cooking, add eggs and cream to a large bowl and whisk until creamy.
- Add salt and pepper and whisk to combine.
- Stir in grated Kerrygold Aged Cheddar cheese.
- When vegetables are done cooking, pour egg mixture over vegetables and cook until eggs are just set around the edges (3-5 Minutes)
- Move pan to oven and bake for 15-18 minutes or until eggs are set.
- Remove from oven and cool for 5 minutes.
- Sprinkle with fresh arugula and serve.
