Instructions:
- Preheat the oven to 400°F. Line a baking pan with parchment paper and set aside.
- Place chopsticks on a cutting board and place one potato on top.
- Using a sharp knife, slice the potatoes in 1/8 inch slices, making sure to not cut all the way through, Using the chopsticks prevents the knife from slicing all the way down,
- Repeat with remaining potatoes and set on prepared pan
- Melt the Kerrygold Salted butter and add one tablespoon of chopped parsley.
- Drizzle the tops of the potatoes with olive oil and season with salt and pepper.
- Brush the tops of the potatoes with the melted butter and parsley mixture.
- Bake in a preheated oven for 60 minutes or until potatoes are cooked through,
- Remove from oven and brush with the remaining butter and parsley mixture.
- Garnish with fresh parsley and serve immediately.
