Dough Instructions:
- Place the warmed egg nog in the bowl of a stand mixer and sprinkle the yeast over the top. Wait 5 minutes for the yeast to get wrinkly and activate.
- Add the sugar, eggs and Kerrygold Unsalted Butter and mix to combine.
- Add the flour and salt and stir with a spatula so the flour can absorb some of the moisture. Let sit for 3 minutes and then mix with the dough hook until batter is shiny and batter doesn’t stick to sides of bowl (3-5 minutes).
- Spray a large bowl with nonstick spray and place dough in the bowl. Put the bowl in a warm space and let dough rise for two hours.
Filling Instructions:
- Punch the risen dough down and roll out to a 19 x 12” rectangle.
- Spread the softened butter over the dough leaving a ½” gap around the edge.
- Sprinkle the brown sugar and cinnamon over the butter. Roll the dough into a log starting with the long edge.
- Cut into 12 equal pieces and place in a greased 9 x 12” pan. Let dough rise for another hour.
- Bake at 350°F for 30 minutes or until golden brown. Cool slightly before frosting.
Frosting Instructions:
- Beat cream cheese and butter until smooth and fluffy. Add the confectioners sugar and the egg nog and beat until smooth.
- Spread over cooled rolls and serve.
