Instructions:

  1. Roll the puff pastry out slightly into an 8 x 12 rectangle and fold edges over to make crust.
  2. Press the edges down with the tines of a fork to seal and prick the bottom of the crust.
  3. Preheat the oven to 400.
  4. Melt the 2 tablespoons of Kerrygold Salted Butter in a small skillet and add the sliced leeks. Sauté for 5-10 minutes or until leeks are lightly browned and soft. Remove from heat.
  5. Place ½ cup shredded Kerrygold Skellig cheese on top of prepared puff pastry.
  6. Scatter leeks on top and arrange apples in fans on top of the crust.
  7. Add remaining Kerrygold Skellig cheese over the top of the apples.
  8. Brush the edges of the crust with the egg wash.
  9. Bake the tart for 20 minutes or until crust is golden brown and cheese is melted.
  10. Slice into 6 squares and garnish with fresh thyme leaves.
  11. Serve immediately.
