Instructions:
- Roll the puff pastry out slightly into an 8 x 12 rectangle and fold edges over to make crust.
- Press the edges down with the tines of a fork to seal and prick the bottom of the crust.
- Preheat the oven to 400.
- Melt the 2 tablespoons of Kerrygold Salted Butter in a small skillet and add the sliced leeks. Sauté for 5-10 minutes or until leeks are lightly browned and soft. Remove from heat.
- Place ½ cup shredded Kerrygold Skellig cheese on top of prepared puff pastry.
- Scatter leeks on top and arrange apples in fans on top of the crust.
- Add remaining Kerrygold Skellig cheese over the top of the apples.
- Brush the edges of the crust with the egg wash.
- Bake the tart for 20 minutes or until crust is golden brown and cheese is melted.
- Slice into 6 squares and garnish with fresh thyme leaves.
- Serve immediately.
