Instructions

  1. Boil the red potatoes until fork tender, cool in a colander until easy to handle and dice.
  2. Add mayonnaise, sour cream, olive oil, vinegar, salt and pepper to a small bowl and whisk to combine.
  3. Place the potatoes, green onions ,bacon and parsley in a large bowl. Add the dressing and toss to coat. Sprinkle with the Kerrygold Cashel Blue cheese.
  4. Refrigerate or serve immediately. If refrigerated, let it come to room temperature for 30 minutes before eating. Serve with the cooked sausages.
