Instructions:

  1. Preheat the oven to 350°F degrees. Line a 9-inch cake pan with parchment paper or spray with cooking spray.
  2. Place the Kerrygold Unsalted Butter and sugar in the bowl of a stand mixer and cream for 2 minutes or until light and fluffy.
  3. Add egg and almond extract and beat for an additional minute.
  4. Place the flour, salt and baking powder in a bowl and mix together.
  5. Add flour mixture to butter and sugar mixture in 3 parts mixing until just combined. Batter will be thick.
  6. Spoon batter into prepared pan and press into pan until smooth on top.
  7. Scatter slivered almonds on top and press into batter so they don’t fall off after baking.
  8. Whisk together egg and water. Brush the top of the cake with the egg wash. Bake for 30 minutes.
  9. Cool completely and run a knife around the edge to make sure edges release cleanly. Remove cake from pan and place on a cutting board. Cut into 8 pieces and serve.
