Instructions:
- Preheat the oven to 350°F degrees. Line a 9-inch cake pan with parchment paper or spray with cooking spray.
- Place the Kerrygold Unsalted Butter and sugar in the bowl of a stand mixer and cream for 2 minutes or until light and fluffy.
- Add egg and almond extract and beat for an additional minute.
- Place the flour, salt and baking powder in a bowl and mix together.
- Add flour mixture to butter and sugar mixture in 3 parts mixing until just combined. Batter will be thick.
- Spoon batter into prepared pan and press into pan until smooth on top.
- Scatter slivered almonds on top and press into batter so they don’t fall off after baking.
- Whisk together egg and water. Brush the top of the cake with the egg wash. Bake for 30 minutes.
- Cool completely and run a knife around the edge to make sure edges release cleanly. Remove cake from pan and place on a cutting board. Cut into 8 pieces and serve.
