Instructions:
- Preheat the oven to 350°F and line an 8×8 pan with parchment paper.
- Combine Kerrygold Salted Butter Sticks and 8 ounces of chopped chocolate in a microwave safe bowl and heat at 50% power for 2 minutes or until melted. Stir to combine and let the mixture cool slightly.
- Stir the sugar into the chocolate mixture. Add the eggs and whisk thoroughly. Pour in beer and stir to combine.
- In a small bowl mix together the flour, cocoa and salt.
- Add flour mixture to chocolate mixture and stir until thoroughly combined and mixture is glossy.
- Pour brownie batter into the prepared pan. Scatter chocolate chunks on top and sprinkle with flaky sea salt. Bake for 28-30 minutes or until a toothpick inserted in the center comes out with a few fudgy crumbs sticking to it.
- Cool completely and cut into 12 squares. Sprinkle with additional flaky sea salt, if desired.
